But as you know, no matter how healthy your salad might be, pouring a fattening dressing on top completely takes the low fat goodness away. Ingredients:
Extra Virgin Olive Oil (a good quality brand)
Balsamic Vinegar
Dijon Mustard
Anchovy paste
Sea Salt & Cracked Black Pepper
Optional: 1 clove of finely grated garlic
Depending on how much you want to make and how much you like balsamic decides what your quantities will be. But just keep in mind the ratio 2 to 1 and taste as you go.
In a large measuring cup or on the bottom of your salad bowl put 1 tablespoon of Dijon mustard, 1 teaspoon of anchovy paste and 1/4 cup of balsamic vinegar and whisk together. As you continue to wish slowly stream in the 1/2 cup of Extra Virgin Olive Oil into the mixture and watch it come together, add salt and pepper to taste. You might want a little bit more balsamic or a little bit less olive oil, so tasting is key.
As an option for more of a punch in flavor you can also finely grate a garlic clove into the mixture before whisking. Regardless, this easy healthy salad dressing is the best and once you make it you will never buy another bottle of processed dressing again.
